Who would’ve thought that vegetables rolled up in rice paper would be so addictive once you added some peanut sauce next to it?

They’re so fun to make and even more fun to eat! They’re like individually wrapped little salads. They’re a great snack and would make a wonderful and beautiful display for guests. And it’s a great healthy, hassle-free alternative to the usual fried options.

Rice Paper Veggie Rolls with Peanut Dipping Sauce

Ingredients

Veggie Rolls:
  • Rice paper
  • 1 red cabbage, chopped
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • Mint leaves
  • Bean sprouts
  • Snow pea sprouts
  • Alfalfa radish sprouts
  • Sesame seeds
Peanut Sauce:
  • 1 cup (160g) peanut butter
  • 4 tbsp maple syrup
  • 4 tbsp soy sauce
  • 2 garlic cloves
  • 1 lime

Instructions

  1. In a blender, combine the ingredients for the peanut sauce and blend until smooth.
  2. Add 1 tablespoon of water at a time to achieve the desired consistency.
  3. Set aside.
  4. Cut and julienne vegetables of your choice – I chose carrots, zucchini, and cabbage.
  5. Submerge the rice paper into water for 30 seconds, until softened.
  6. Lay it on a flat surface and fill the rice paper with your chosen vegetables. I added alfafa radish sprouts, snow pea sprouts, and bean sprouts.
  7. Roll the rice paper gently by closing the edges and rolling it tightly.
  8. Cut in half, garnish with sesame seeds, and serve!

Notes:

  • For a sweeter sauce, add just 2 tbsp of soy sauce and no lime.
  • You can add any meats and vegetables you want to this veggie roll, it is completely customizable!
